       Collected are the ripe and juicy blackberry fruits, usually black, rarely red berries, which are gathered in the early morning or late evening because then the fruit is being preserved, and juicier. Blackberries are packed in boxes of three or four lines, so that it wouldn’t get damaged, crushed, and that the juice wouldn’t leak. Blackberries are transported to our manufacturing plant by air-conditioned lorries and placed in Lactofreeze cooling tank made of stainless steel where turbulent fermentation is initiated. Certain enzymes and yeasts are added to have fermentation done easier and for easier segmentation of the wine. After fermentation which separates the surface in the form of “bread”, the precious liquid remains below and at the bottom are dead bacteria and yeasts. Blackberry wine is decanted and a smaller, but very good quality Radman is produced. Wine is stored for the so-called fine (slow) fermentation. During the aging process it takes a few more times to pour wine. Finally, the wine is enriched with honey and our secret ingredient (passed from father to son for generations) is now added. Wine remains to be filtered, pasteurized and bottles to be closed with corks. Now it's time for labeling, waxing, putting little book and packing in boxes.

HOW TO MAKE HOMEMADE BLACKBERRY WINE YOURSELF:

 For 1 liter of blackberry wine is necessary to have:
• 1.6 kg. fresh blackberries,
• 320 g sugar (1:5 ratio),
• Put a layer red blackberries and then layer of sugar and repeat
• Leave it to stand for as long as you can hear the crackling (approximately 15-20 days).
• Cover it with fabric to save from flies, bugs ...
• When it stops crackling then a kind of “bread”  will be formed on the surface which has an unpleasant smell
• Pour off the resulting liquid and sludge can be used for making brandy or as the fertilizer,
• Leave it to stand for 10 days, and again pour off to remove any residues.
• Pour the wine through fabric.
• Pour into a saucepan and boil at 85c.
• Pour the hot wine in the heated bottles and close them immediately.

 For fans of sweeter wines put ratio 1:4 (1 kg of sugar per 4 kg of blackberries)
The best pleasure is when the wine is cooled to a temperature of 10˚C.
